Know Your Roots!
With winter cranking up a few notches outside it’s the time of year when we start to get heavily into our roots. We don’t mean getting out that Studio One boxset, we’re talking root vegetables here. Beetroot, celeriac, parsnips, swede, sweet potatoes & even the humble carrot are at their best & most timely. We love them in all manner of soups, stews & curries as well as pureed & mashed.
A mix of chunky carrot, celeriac & parsnip roasted with some garlic & thyme to accompany a hefty slice of slow braised brisket of beef is a particular favourite of ours. Serve with some creamy mash or Dauphinoise & a splash of red wine gravy for some serious comfort food, guaranteed to add a bit of cheer to those long, cold winter nights. Know your roots!
On the canapes front our Roasted Beetroot & Parsnip Soup Shots with sour cream & chives have been going down a treat with a number of our corporate clients at recent events. We like to add just a tad of fresh chilli too for that essential spice kick. A delicious winter canape & what a great colour too. Get right to the root of the matter!
